  • 300g lotus root
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

Peel the lotus root thoroughly and slice it into about 0.5cm thick rounds. Place the sliced lotus root in a bowl of water with 1 Tbsp of vinegar and soak for 10 minutes. Soaking in vinegar water removes the astringent and bitter taste, helps maintain a beautiful white color after cooking, and preserves its crisp texture.

Rinse the lotus root well after soaking in the vinegar water. Place the lotus root in a pot with 1 cup of water and boil over high heat for 15 minutes, or until the lotus root turns translucent. Discard the boiling water, then rinse the lotus root under cold water to cool it down and enhance its crispness.

Now it’s time to braise the lotus root. In a pot, combine the rinsed lotus root, 7 Tbsp of soy sauce, and 1 Tbsp of cooking wine. Bring to a boil over medium heat. Stir occasionally to ensure the soy sauce mixture evenly coats the lotus root as it braises.

As the liquid in the braised lotus root reduces and the soy sauce mixture begins to coat the lotus root, add 7 Tbsp of corn syrup (oligosaccharide) to add shine. Adding corn syrup enhances the sweetness and gives it a subtle, appetizing gloss.

Continue to simmer for another 1-2 minutes after adding the corn syrup, allowing the sauce to thicken slightly and coat the lotus root evenly. Your delicious braised lotus root is now complete! If you turn off the heat when there’s still a little bit of sauce remaining, you’ll have a wonderfully moist braised dish.

Arrange the finished braised lotus root attractively on a plate and sprinkle with a pinch of sesame seeds for an even more appealing presentation. This braised lotus root is not only nutritious but also incredibly delicious – a true rice thief! Enjoy it with a warm bowl of rice.
