  • 3 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin)
  • 1 Tbsp sugar
  • 2 Tbsp rice syrup (oligosaccharide)

First, wash the Seoritae beans thoroughly and place them directly into a pot without soaking. This method helps the beans maintain their shape without getting mushy while cooking.

Add 3 cups of water to cover the beans and bring to a boil over high heat. Once boiling, reduce the heat to medium, remove the lid, and simmer for about 30-40 minutes. If the water reduces too much during cooking, add a little warm water as needed to ensure the beans are fully tender. The well-cooked beans and their cooking water can be portioned and frozen for convenient use in making soy milk noodle soup or other bean-based dishes later.
