  • 1 Sweet Potato (medium size)
  • 0.3 tsp Salt
  • 1 Tbsp Starch (corn or potato starch)
  • 1 Tbsp Milk

First, let’s prepare the sweet potato, the base of our delicious pancake. I’m using a sweet Japanese sweet potato variety. Wash it thoroughly under running water, place it in a pot, and cover with enough water to submerge the sweet potato. Bring to a boil over high heat, then reduce to medium heat and simmer for about 20 minutes until very tender. It’s done when a chopstick inserted easily pierces through.

Once the sweet potato is well-cooked, drain it lightly in a colander. While it’s still warm, peel off the skin. Transfer the peeled sweet potato to a wide, shallow bowl suitable for mashing. Mashing while still warm makes the process much smoother.

Now, let’s mash the sweet potato. Use a fork or a potato masher to mash the sweet potato until it’s completely smooth, with no lumps. Lumps will affect the texture, so it’s crucial to mash it thoroughly to achieve a smooth batter-like consistency. This step is key to creating those wonderfully soft sweet potato pancakes.

Add salt to the mashed sweet potato to balance the flavors. While sweet potatoes are naturally sweet, a pinch of salt enhances their sweetness and adds depth to the overall taste, preventing it from being bland. Add about 0.3 teaspoons of salt and mix well to season.
