  • Sea mustard stems 300g (salted)
  • 1/3 Onion (approx. 50g)
  • 2 Scallions (approx. 20g)
  • A little Carrot (optional)

Seasoning

  • 1/2 Tbsp Plum Extract
  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • Sesame Seeds

Cooking Instructions

Step 1

First, it’s crucial to remove the saltiness from the salted sea mustard stems. Rinse them thoroughly under running water multiple times. Continue rinsing until the cloudy water they release becomes clear.

After rinsing, soak the sea mustard stems in fresh water for about 10 minutes. This helps to further reduce the saltiness and makes them more tender.

While the sea mustard stems are soaking, prepare the vegetables and seasonings. Thinly slice the onion. Cut the scallions into about 5cm lengths. If using carrot, julienne it finely like the onion. (I’ve omitted the carrot in this recipe.) For the seasoning, you’ll need 1/2 Tbsp plum extract, 1 Tbsp soy sauce, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, and some sesame seeds for garnish.

Once soaked, firmly squeeze out as much water as possible from the sea mustard stems using your hands. Any remaining water can make the dish mushy. Cut the squeezed stems into bite-sized pieces, about 5-7cm long, for easier cooking.

Now, let’s start stir-frying! Heat a frying pan over medium heat and add a generous amount of olive oil or cooking oil. Once the oil is hot, add the squeezed sea mustard stems and stir-fry for about 3 minutes. It’s important to maintain medium heat to prevent a fishy smell; stir-frying over high heat can cause this. Continue stir-frying until the stems become slightly translucent.

Reduce the heat to low. Add the prepared seasonings: 1/2 Tbsp plum extract, 1 Tbsp soy sauce, and 1/2 Tbsp minced garlic. Stir-fry together with the sea mustard stems, mixing well. Since salted sea mustard stems are already salty, be cautious not to over-season, or it will be too salty to enjoy. Taste and adjust as needed.

Add the sliced onion, scallions, and carrot (if using). Stir-fry for another 1-2 minutes until the vegetables soften and the seasonings are evenly distributed. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma and mix gently.
