I love dried vegetables, so I made this, and it’s delicious! This recipe features the delightful chewy texture and savory flavor unique to dried vegetables. It’s an easy-to-make dish perfect for holiday banquets or as a winter side dish. It’s so good, it’ll make you want more rice!
Ingredients- 1 Tbsp Korean soy sauce (Joseon Ganjang)
- 1 Tbsp Perilla oil (Deulgireum)
- 1 Tbsp Minced garlic
- 1 Tbsp Perilla seeds (Deulkkae)
- A pinch of MSG (optional, can be omitted)
- A little water (if needed)
- 60g Dried sweet potato stems
Cooking Instructions
Step 1
First, we’ll be using dried sweet potato stems. Prepare a large pot, fill it with cold water, and add the dried sweet potato stems. Simmer them for about 1 hour until they are thoroughly softened. This softening process is crucial for a tender texture.
Step 2
Once the sweet potato stems are well-softened, rinse them thoroughly under cold running water 3 to 4 times. This step removes any remaining impurities and helps eliminate any raw taste.

Drain the rinsed sweet potato stems well using a sieve. It’s important to remove excess water, as any remaining moisture can make the dish watery when stir-fried.

Now, cut the sweet potato stems into bite-sized pieces. It’s best to cut them to a length that’s easy to eat in one bite.

Place the cut sweet potato stems in a bowl. Add 1 tablespoon of minced garlic, 1 tablespoon of Joseon Ganjang, and a pinch of MSG (if using). Gently mix and massage the ingredients into the stems to ensure the seasoning is well distributed.

Heat a pan over medium heat and add a generous amount of cooking oil. Add the seasoned sweet potato stems and stir-fry them until they are fragrant and slightly tender. You’ll notice a savory aroma developing as they cook.

When the sweet potato stems are cooked to your liking, add a small amount of water and 1 tablespoon of perilla seeds, stirring as they cook. Just before turning off the heat, drizzle in 1 tablespoon of perilla oil and gently toss to combine. This final step enhances the nutty aroma and flavor.
