  • 250g dried king oyster mushrooms
  • A small amount of green onion (chopped)

Seasoning Ingredients

  • 1 Tbsp soy sauce for soup (Guk-ganjang)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp Dasida (or MSG-based seasoning)
  • 2 Tbsp perilla oil
  • 200ml water
  • 2 Tbsp perilla seed powder

Cooking Instructions

Step 1

Prepare the dried king oyster mushrooms. Since they are dried, they need to be rehydrated before cooking.

Place the dried king oyster mushrooms in a large bowl and pour lukewarm water over them. Let them soak for at least 30 minutes until they become tender. After soaking, gently squeeze out excess water with your hands. Be careful not to squeeze too hard, as the mushrooms might crumble.

Heat 2 tablespoons of perilla oil in a pan over medium heat. Add the squeezed mushrooms and stir-fry until they are lightly golden. Then, add 1 tablespoon of minced garlic, 1 tablespoon of soy sauce for soup, and 1/2 tablespoon of Dasida, and continue to stir-fry until fragrant.

Once the seasonings have coated the mushrooms, pour in 200ml of water. Adding water will make the mushrooms more tender and help the flavors meld.

Once the water starts to boil, reduce the heat slightly and stir in 2 tablespoons of perilla seed powder. Perilla seed powder adds a rich, nutty flavor and thickens the sauce.

After adding the perilla seed powder, stir well and continue to cook. Stir occasionally to prevent sticking.

When the liquid has reduced to a simmer, add the chopped green onion and stir-fry briefly. The fresh, crisp taste of the green onion will enhance the overall flavor.
