- 3 fresh egg yolks
- A pinch of sesame seeds
- A pinch of black pepper
Ingredients for the Perfect Sauce- 4 Tbsp soy sauce
- 4 Tbsp mirin or rice wine
- 1 Tbsp oyster sauce
- 2 Tbsp oligosaccharide or corn syrup
- 1/2 tsp ginger powder (or 1/4 tsp minced fresh ginger)
- 4 Tbsp soy sauce
- 4 Tbsp mirin or rice wine
- 1 Tbsp oyster sauce
- 2 Tbsp oligosaccharide or corn syrup
- 1/2 tsp ginger powder (or 1/4 tsp minced fresh ginger)
Cooking Instructions
Step 1
Prepare the Pork Belly: Cut the pork belly into bite-sized pieces, about 2-3 cm. Lightly pat dry any excess moisture with paper towels, then season with a pinch of black pepper. This will enhance the flavor.
Step 2
Make the Special Sauce: In a wide bowl, combine 4 Tbsp soy sauce, 4 Tbsp mirin, 1 Tbsp oyster sauce, 2 Tbsp oligosaccharide, and 1/2 tsp ginger powder. Whisk or stir until well combined and smooth. This is the secret to a delicious deopbap, so mix thoroughly!
Step 3
Sauté the Onion: Slice the onion thinly. Heat a non-stick skillet over medium-high heat (no oil needed). Add the sliced onions and a pinch of black pepper, then stir-fry quickly for about 1-2 minutes until tender-crisp. You want to bring out the onion’s natural sweetness without overcooking. Transfer the sautéed onions to a separate bowl.
Step 4
First Sear of Pork Belly: Now it’s time to cook the pork belly. Heat a skillet over medium heat. Add the seasoned pork belly and sear on both sides until lightly golden brown, about 2-3 minutes per side. You’re aiming to lightly cook the exterior.
Step 5
Searing Tip: Crucially, do not cook the pork belly all the way through at this stage! It will finish cooking in the sauce. Lightly searing the outside helps to lock in the juices, ensuring a tender result later.
Step 6
Simmer in Sauce: Once the pork belly is partially cooked, pour 2-3 tablespoons of the prepared sauce into the skillet. Reduce the heat to low and simmer, making sure the sauce doesn’t burn.
Step 7
Simmering for Flavor: Continue to simmer for about 3-5 minutes, flipping the pork belly occasionally to ensure it’s evenly coated with the sauce. Cook until the sauce has reduced and clings to the pork belly, giving it a delicious, deep brown color. The aroma will be incredible!
Step 8
Assemble the Bowl: Place the warm cooked rice into a serving bowl. Evenly spread the sautéed onions over the rice.
Step 9
Arrange the Pork Belly: Artfully arrange the simmered pork belly over the onions. The combination of rice, onions, and pork belly will be fantastic.
Step 10
Garnish and Serve: Gently place a fresh egg yolk in the center of the deopbap. Garnish with chopped scallions or chives, and sprinkle with sesame seeds for a final flourish. Your delicious and visually appealing Samgyeopsal-Deopbap is ready to enjoy!
