Chewy and Savory Perilla Leaf and Glass Noodle Pancake with Cheese

Got some leftover glass noodles (about 50g) that you don’t know what to do with? Let perilla leaves and tofu come to the rescue! Adding in some mozzarella cheese makes for an incredibly chewy and savory Perilla Leaf and Glass Noodle Pancake. With the satisfying addition of glass noodles, this pancake is hearty enough to be a meal on its own, replacing your usual rice. How about it?
Main Ingredients
- Glass noodles: 50g
- Fresh perilla leaves: 10 leaves
- Firm tofu for pan-frying: 1 block (approx. 300g)
- Fresh eggs: 2-3
- Shredded mozzarella cheese: as needed

Cooking Instructions
Step 1
First, soak the 50g of dried glass noodles in lukewarm water for about 30 minutes until softened. Then, blanch the soaked noodles in boiling water for 3-4 minutes. Rinse them under cold water, drain well, and finely chop them. This step ensures a wonderfully chewy texture.
Step 2
Wrap the block of tofu in a cheesecloth or paper towels and squeeze out as much water as possible. Remove the stems from the perilla leaves, wash them thoroughly, and then thinly slice them into shreds.
Step 3
In a large bowl, combine the chopped glass noodles, squeezed tofu, and shredded perilla leaves. Add 2-3 eggs, 1 tsp of soy sauce, 1 tsp of sesame oil, and 1/2 tsp of salt. Mix everything together thoroughly to form a well-combined batter.
Step 4
Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Scoop about 1 tablespoon of the batter per pancake and place it onto the hot pan. Gently flatten them into small, round shapes. Cook until golden brown on both sides. It’s best to cook over medium-low heat to ensure they cook through without burning.

Once one side is golden brown, sprinkle about 1/2 tablespoon of mozzarella cheese on top of each pancake. Carefully fold the pancake in half to enclose the cheese, ensuring it doesn’t spill out.

Place the folded pancakes back onto the pan and cook for another minute or two on each side until they are golden brown and the cheese inside is melted and gooey.
