Today, she’s sharing a recipe for Dor-e-muk Jorim, a delicious braised fish dish made with semi-dried saury balls from her freezer and generously cut radish, guaranteed to be a rice-thief!
Main Ingredients- 15 semi-dried saury balls (Dor-e-muk)
- 1/3 medium radish
- 1 green chili pepper
- 1 red chili pepper
- A small amount of green onion
- 1.5 cups (270ml) water
- 1 Tbsp red pepper powder (to add during simmering)
Seasoning Sauce- 3 Tbsp soy sauce
- 1 Tbsp low-sodium fish sauce
- 4 Tbsp oligodang (or corn syrup)
- 2 Tbsp cooking sake (mirin or rice wine)
- 1 Tbsp minced garlic
- 1/3 Tbsp ginger powder (or a little ginger juice)
- 3 Tbsp red pepper powder
- 3 Tbsp soy sauce
- 1 Tbsp low-sodium fish sauce
- 4 Tbsp oligodang (or corn syrup)
- 2 Tbsp cooking sake (mirin or rice wine)
- 1 Tbsp minced garlic
- 1/3 Tbsp ginger powder (or a little ginger juice)
- 3 Tbsp red pepper powder
Cooking Instructions
Step 1
First, prepare the main ingredient, radish, by cutting it into large, flat slices about 0.5 cm thick. Remove the stems from the green and red chili peppers and slice them diagonally about 0.5 cm thick to add color and mild spiciness. Finely chop the green onion.
Step 2
The key to delicious braised saury balls is the sauce! In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp low-sodium fish sauce, 4 Tbsp oligodang, 2 Tbsp cooking sake, 1 Tbsp minced garlic, 1/3 Tbsp ginger powder, and 3 Tbsp red pepper powder. Mix thoroughly with a spoon to create a flavorful seasoning sauce.
Step 3
In a wide-bottomed pot, first lay down the sliced radish at the bottom. Arrange the cleaned semi-dried saury balls attractively on top of the radish. Pour the prepared seasoning sauce evenly over the fish and radish. Lastly, carefully pour the 1.5 cups of water along the edges of the pot. Begin to boil over high heat. Once the water comes to a rolling boil, reduce the heat to medium and let it simmer until the sauce thickens and coats the ingredients.
Step 4
During the simmering process, if you desire a spicier and deeper flavor, sprinkle an additional 1 Tbsp of red pepper powder over the pot. This will make your braised fish dish even more special. While it simmers, periodically spoon some of the sauce from the pot over the fish and radish to ensure the flavors are evenly distributed and enhance the taste. Once the sauce has reduced to your desired consistency, add the prepared green and red chili peppers and green onion, and simmer for another short while to infuse their aroma.
