Main Ingredients

  • 200g Sea Mustard (Tot) (fresh)
  • 1/4 medium Onion
  • 1 Red Chili Pepper
  • 1/2 piece White part of Green Onion (about 5cm)

Seasoning

  • 1 Tbsp Gochugaru (Korean chili powder)
  • 2 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Vinegar (adjust to your preferred tanginess)
  • 1 Tbsp Maesil Extract (Plum Syrup) (adds sweetness and depth)
  • 1/2 Tbsp Sugar (adjust to taste)
  • 1/2 Tbsp Minced Garlic (freshly minced garlic is best)

Cooking Instructions

Step 1

First, rinse the sea mustard thoroughly under running water. Bring a pot of water to a boil. Briefly blanch the sea mustard for about 30 seconds to 1 minute. Be careful not to overcook it, as it can become mushy. Immediately transfer the blanched sea mustard to cold water to cool it down, then squeeze out excess water thoroughly.

Peel the onion and slice it into very thin strips. Finely chop the white part of the green onion.

Remove the stem from the red chili pepper and slice it thinly on a diagonal. (If you prefer it spicier, you can leave the seeds in.) Cut the squeezed sea mustard into bite-sized pieces, about 3-4 cm long.

In a mixing bowl, combine all the seasoning ingredients: gochugaru, gochujang, vinegar, maesil extract, sugar, and minced garlic. Mix them well to create the dressing. Add the finely chopped green onion to the dressing and stir again.

Add the cut sea mustard, thinly sliced onion, and diagonally sliced red chili pepper to the prepared dressing. Gently toss everything together to ensure the seasoning coats the sea mustard and vegetables evenly.
