How to Make Delicious and Easy Angel Hair Pasta Bibim Guksu
We’ve created a beautiful bibim guksu using angel hair pasta transformed to have a chewy, noodle-like texture. This recipe is perfect for a summer treat – simple and incredibly tasty.
Main Ingredients- Angel hair pasta (processed to resemble glass noodles), 288g (rinsed thoroughly with cold water)
- Carrot, 1/4 (julienned finely)
- Cucumber, 1/2 (seeds removed, then julienned finely)
- Perilla leaves, 4 leaves (washed and thinly julienned)
Bibim Sauce- Gochujang (Korean chili paste), 1.5 Tbsp
- Vinegar, 2 Tbsp
- Soy sauce, 2 Tbsp
- Oligosaccharide (or corn syrup/honey), 2.5 Tbsp (adjust sweetness to taste)
- Sesame oil, 1 Tbsp
- Sesame seeds, 1 Tbsp (toasted sesame seeds add more flavor)
- Gochujang (Korean chili paste), 1.5 Tbsp
- Vinegar, 2 Tbsp
- Soy sauce, 2 Tbsp
- Oligosaccharide (or corn syrup/honey), 2.5 Tbsp (adjust sweetness to taste)
- Sesame oil, 1 Tbsp
- Sesame seeds, 1 Tbsp (toasted sesame seeds add more flavor)
Cooking Instructions
Step 1
First, prepare the fresh vegetables for the bibim guksu. If you like extra crunch, thinly slice some cabbage and add it to the mix.
Step 2
Rinse the angel hair pasta (processed to be like glass noodles) under cold running water using a colander. This step removes excess moisture and helps achieve a wonderfully chewy texture.
Step 3
Wash the carrot, peel it, and julienne it into fine strips, about 0.3cm thick. Do the same for the cucumber. Wash the perilla leaves, pat them dry, then stack them, roll them up tightly, and slice them thinly into fine strips.
Step 4
In a bowl, combine the sauce ingredients: Gochujang (1.5 Tbsp), Oligosaccharide (2.5 Tbsp), Sesame oil (1 Tbsp), and Vinegar (2 Tbsp). Stir well with a spoon until evenly mixed to create the sauce base. You can adjust the amount of oligosaccharide to make it sweeter or less sweet according to your preference.
Step 5
Add Soy sauce (2 Tbsp) and Sesame seeds (1 Tbsp) to the sauce base and mix again until the sauce is well combined. Gently separate the angel hair pasta strands into manageable portions.
Step 6
Place the prepared angel hair pasta in a large mixing bowl. Add the bibim sauce first and gently toss to coat the pasta evenly. Then, add the julienned carrot, cucumber, and perilla leaves. Carefully mix everything together, being careful not to mash the ingredients. Taste and adjust the seasoning if needed by adding more sauce components. Transfer the finished bibim guksu to a serving bowl and garnish with the remaining julienned perilla leaves on top.
