  • 300g blanched sweet potato stems
  • 1/2 stalk of green onion
  • 200ml anchovy broth

Seasoning
  • 2 Tbsp soup soy sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp perilla oil (deul-gireum)
  • 1/2 Tbsp fish sauce
  • Sesame seeds

Cooking Instructions

Step 1

First, rinse the blanched sweet potato stems thoroughly under running water to remove any impurities. Then, cut them into bite-sized pieces. This ensures the seasoning coats them evenly for maximum flavor.

Step 2

In a bowl, add the minced garlic (1/2 Tbsp) and soup soy sauce (2 Tbsp) to the cut sweet potato stems. Gently mix and massage them with your hands to marinate. Let them sit for about 10 minutes to absorb the flavors.

Step 3

Finely chop the green onion. Slice it thinly to ensure it doesn’t become too soft when stir-fried, retaining a pleasant crispness.

Step 4

Heat a pan over medium-low heat. Add the marinated sweet potato stems and 1 Tbsp of perilla oil. Stir-fry for about 2-3 minutes. Pour in the anchovy broth (200ml), cover the pan with a lid, and let it simmer for about 5 minutes. This gentle cooking process will tenderize the stems and allow the flavors to meld beautifully.

Step 5

After 5 minutes, add the fish sauce (1/2 Tbsp). Remove the lid and continue to stir-fry briefly until there’s still a nice, moist sauce remaining. Avoid overcooking, as this can make the stems dry and less appealing. The goal is a tender, slightly moist texture.

Step 6

Taste and adjust the seasoning if needed by adding a tiny pinch of salt. Finally, add the chopped green onions and a generous sprinkle of sesame seeds. Stir-fry for another moment until the green onions are just wilted. Your delicious and moist stir-fried sweet potato stems are ready to enjoy!
