Stir-Fried Sea Mustard Stems
A delicious stir-fried dish using sea mustard stems, a treasure from the sea. Its chewy texture is excellent, and it’s packed with various nutrients beneficial for vascular health, making it a healthy side dish enjoyable for everyone. Here’s a recipe for perfectly clean-tasting stir-fried sea mustard stems.
Main Ingredients- 2 handfuls salted sea mustard stems (approx. 2 handfuls after rinsing)
Seasoning Ingredients- 1/2 Tbsp minced garlic
- 1/2 Tbsp red pepper flakes
- 1 Tbsp sesame oil
- 2 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds (crushed)
- 1 Tbsp soup soy sauce or regular soy sauce (Yeondu)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp red pepper flakes
- 1 Tbsp sesame oil
- 2 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds (crushed)
- 1 Tbsp soup soy sauce or regular soy sauce (Yeondu)
Cooking Instructions
Step 1
Prepare fresh salted sea mustard stems. Salted sea mustard stems may look like they have a lot of salt, but they reduce to a manageable amount after being thoroughly washed. About 2 handfuls is a good quantity.
Step 2
This step removes the saltiness from the sea mustard stems. Instead of soaking them in water for a long time, rinse them thoroughly under running water, scrubbing gently, to remove most of the salt. Rinse them 1-2 times.
Step 3
Fill a pot with plenty of water and bring it to a rolling boil. Briefly blanching the sea mustard stems will help eliminate their characteristic fishy smell and result in a cleaner taste.
Step 4
Once the water is boiling, add the prepared sea mustard stems and blanch for about 30 seconds to 1 minute. After the water returns to a boil, remove the stems and rinse them under cold water 2-3 times. This process will properly season the sea mustard stems and remove most of the salt. Let the water drain naturally before cooking.
Step 5
Place the prepared sea mustard stems in a large bowl or wok. Add all the seasoning ingredients: minced garlic, red pepper flakes, sesame oil, perilla oil, crushed sesame seeds, and soup soy sauce (or Yeondu). Gently mix with your hands to ensure the seasonings are evenly distributed.
Step 6
Stir-fry the seasoned sea mustard stems in a pan or wok heated over medium-high heat. Keep stirring to prevent burning and cook for about 7-10 minutes. It’s important to sauté until the sea mustard stems are tender and the seasonings are well combined.
Step 7
Taste the dish and adjust the seasoning with a little salt or soy sauce if needed. However, this amount of seasoning is usually sufficient for a delicious result. It’s perfectly fine to eat as is.
