Recipe Info

  • Category : Side dish
  • Ingredient Category : Dried seafood
  • Occasion : Everyday
  • Cooking : Seasoned mix
  • Servings : 4 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 1 dried squid (adjust size as needed)
  • 1 Tbsp minced garlic
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract
  • 1/2 Tbsp vinegar
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds or sesame powder

Cooking Instructions

Step 1

Lightly brush the dried squid with oil on both sides, then grill over medium-low heat until golden brown and evenly cooked. This step enhances the squid’s flavor and helps tenderize it.

Step 1

Step 2

Place the grilled squid on paper towels or clean parchment paper, wrapping it on both sides. This helps retain the squid’s moisture and makes it easier to pound in the next step.

Step 2

Step 3

Using a mallet (or the back of a knife or a bottle), gently pound the squid wrapped in paper. This will help detach any slightly burnt parts on the edges and make the squid more tender and chewy.

Step 3

Step 4

After pounding and brushing off any burnt bits, use a sharp knife to scrape the surface of the squid, carefully removing any remaining charred areas. Thorough cleaning is essential.

Step 4

Step 5

Tear or cut the squid into bite-sized pieces. Remove any peeling skin cleanly, and trim the tentacles into manageable pieces. If any parts are too long, cut them to a suitable size.

Step 5

Step 6

Your chewy and tender dried squid is now prepared! It’s time to mix in the delicious seasoning.

Step 6

Step 7

In a bowl with the prepared squid, add the gochugaru, soy sauce, plum extract, vinegar, oligosaccharide, minced garlic, and sesame oil. Sprinkle in the toasted sesame seeds or sesame powder. Gently mix everything together with your hands until the seasoning is evenly coated on the squid. You can adjust the seasoning to your preference.

Step 7

Step 8

Your delicious dried squid salad is ready! While it’s tasty right away, refrigerating it for a day or two will allow the flavors to meld further, resulting in an even richer taste. Enjoy it with rice or a cold beer!
