- 3/4 medium zucchini
- 1/3 medium carrot

Step 1
First, prepare all the ingredients for your zucchini pancakes. Wash all the vegetables thoroughly.

Thinly slice the zucchini to about 0.3 cm thickness, then julienne them into strips about 5 cm long. If you slice them too thinly, they might break apart, so aim for a moderate thickness.
Step 3
Julienne the carrot and onion into strips similar in length to the zucchini. Chop the green onion into pieces about 3-4 cm long. Cutting the green onion to a similar length as the zucchini will make the pancakes look visually appealing.

In a bowl, combine 5 Tbsp of tempura flour, 5 Tbsp of potato starch, and 10 Tbsp of all-purpose flour. Mix these dry ingredients evenly until well combined. Using a mix of tempura flour and starch will result in an extra crispy texture.

Gradually add about 20 Tbsp of water while mixing the batter. It’s crucial to achieve a thick but pourable consistency – not too watery, not too stiff. The batter should slowly drip off a spoon. (The amount of water may vary depending on the type of flour or humidity, so adjust as needed based on the batter’s state.)

Heat a pan over medium heat with a generous amount of cooking oil. Ladle about one portion of the batter onto the hot pan and spread it thinly. Making the pancakes thin is important so they cook through evenly; thick ones can be difficult to cook completely. You can also place the julienned zucchini and vegetables on top of the spread batter.

Once the edges of the batter start to turn golden brown, carefully lift it with a spatula and flip it over to cook the other side. Ensure the pancake doesn’t break apart when flipping.
