  • 300g shiitake mushrooms (about 5-6 mushrooms)
  • 1/4 onion

Cooking Instructions

Step 1

It’s important to properly prepare the shiitake mushrooms. First, use a knife to cut off and remove the tough stem ends.

Step 2

Instead of washing the mushrooms with water, gently wipe off any dirt or debris from both sides using a damp kitchen towel. This method helps retain the mushrooms’ natural aroma and flavor, resulting in a richer taste.

Step 3

Slice the cleaned shiitake mushrooms into bite-sized pieces. For the best chewy texture, slice them into strips about 0.5 cm thick – not too thin!

Step 4

Slice the onion into similar strips as the mushrooms. The sweetness of the onion will blend beautifully with the mushrooms, enhancing the overall flavor.

Step 5

In a small bowl, combine 2.5 Tbsp soy sauce, 2 Tbsp oligosaccharide, 0.5 Tbsp oyster sauce, and 1 Tbsp minced garlic. Whisk together to create a delicious seasoning sauce.

Step 6

Heat a pan over high heat. Add the prepared seasoning sauce and sliced onions to the pan. Stir-fry quickly until the onions become slightly translucent and the sauce begins to bubble.

Step 7

Once the sauce is simmering, add the prepared shiitake mushrooms. Reduce the heat to medium and continue to stir-fry for about 3-5 minutes, or until the mushrooms soften and are well-coated with the sauce. Be careful not to overcook, as they can become tough!
