A Simple Side Dish: Nutritious Stir-Fried Oyster Mushrooms
Mushrooms are known to be healthy, but sometimes it’s hard to use them up! I had some oyster mushrooms left from a hot pot, so I decided to make this stir-fry, which highlights their wonderfully chewy texture. Oyster mushrooms are low in calories, with only 25kcal per 100g, making them excellent for dieting. They are also said to help prevent obesity by hindering the absorption of cholesterol and fats in the intestines. Fresh oyster mushrooms have a slightly grayish hue on the cap’s surface, with clearly defined, whitish gills underneath. For your family’s health, why not try cooking with delicious oyster mushrooms?
Main Ingredients
- 120g oyster mushrooms
- 1/4 onion
- A little carrot
- A little green onion
- 1 green chili pepper (or spicy green chili)

- 1 Tbsp oyster sauce
- 1/2 Tbsp minced garlic

- 1/2 Tbsp toasted sesame seeds

Step 1

Trim the tough ends of the oyster mushrooms. Blanch them in boiling water with a pinch of salt for about 20 seconds – don’t overcook them, or they’ll become mushy. Immediately rinse under cold water and gently squeeze out any excess moisture.

Julienne the onion, carrot, green chili pepper, and green onion. Cutting them into similar sizes will ensure even cooking and make them easier to eat.
Step 4
Heat some cooking oil in a pan over medium heat. Add the sliced green onions and minced garlic, stirring until fragrant to create scallion oil. Once the green onions are lightly browned, add the julienned carrots and onions, and stir-fry until the onions turn translucent. When the onions are softened, add the prepared oyster mushrooms and continue to stir-fry. Now, add 1 tablespoon of oyster sauce for flavor. Adjust the seasoning with salt if needed. (Tip: For best results, add about 4/5 tablespoon of oyster sauce, taste, and then adjust with a pinch of salt. You can also substitute soy sauce for oyster sauce if you prefer.)

Stir everything together to ensure the seasonings are evenly distributed and coat the mushrooms and vegetables. Sprinkle with a pinch of black pepper. Finally, add the julienned green chili pepper and stir-fry quickly for about 30 seconds. Adding it at the end preserves its vibrant color and crisp texture. Turn off the heat and drizzle in the sesame oil and toasted sesame seeds for extra aroma.
