Cooking Instructions
Step 1
Wash the king oyster mushrooms thoroughly and slice them thinly, about 0.5cm thick. Slicing them too thin might reduce the chewy texture. Wash and prepare the carrot, slicing it thinly to a similar thickness.
Step 2
Remove the stems from the Cheongyang pepper, shake out the seeds, and finely mince it. Skip or adjust the amount if you prefer less spice. Crush the garlic cloves with the side of your knife and mince finely.
Step 3
Heat a pan and add 50ml of water. Once the water begins to boil, add the sliced carrots. Stir gently with chopsticks for about 1 minute until the carrots are slightly tender.
Step 4
Gently push the cooked carrots to one side of the pan. Add the sliced king oyster mushrooms to the empty space and cook until they soften and turn lightly golden brown.
Step 5
As the water in the pan starts to reduce, drizzle 1/2 tsp of white sugar (or granulated sugar) and 1/2 tsp of soy sauce along the edges of the pan. Gently mix with a spatula, stir-frying until the sauce evenly coats the ingredients.
Step 6
Add the minced Cheongyang pepper and minced garlic. Stir-fry over high heat for about 1 minute until fragrant and the ingredients are well combined. Once aromatic, turn off the heat. Finally, drizzle with 1/2 tsp of sesame oil and sprinkle with 1/2 tsp of toasted sesame seeds for a glossy finish. Enjoy!
Step 7
Adjust the amount of sugar and soy sauce to your personal preference for sweetness and saltiness. For a richer flavor, you can also add a small amount of oyster sauce or cooking wine.
