Main Ingredients

  • 3 medium eggplants
  • 1 Tbsp minced garlic
  • 3 Tbsp cooking oil

Seasoning Sauce (Mix in advance)

  • 1/2 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp water
  • 5 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 2 Tbsp oligosaccharide

Cooking Instructions

Step 1

First, prepare all your ingredients. Wash the eggplants thoroughly, trim off the stems, and mince the garlic. Measure out and set aside all the ingredients for the seasoning sauce.

In a bowl, combine the gochugaru, water, soy sauce, sesame oil, and oligosaccharide. Whisk everything together until well combined to create a delicious seasoning sauce. Mixing the sauce in advance will make the cooking process much smoother.

Wash the eggplants and remove the stems. Cut each eggplant in half lengthwise, then slice them crosswise into bite-sized pieces, about 0.5 cm thick. This thickness is ideal for achieving a pleasant texture; too thin and they might become mushy, too thick and they’ll take longer to cook.

Heat the cooking oil in a pan over medium heat. Add the minced garlic and stir-fry gently until fragrant, taking care not to burn it. This step is about infusing the oil with garlic aroma.

Once the garlic is fragrant, add the sliced eggplants to the pan. Stir-fry them, tossing gently to prevent sticking, until they begin to soften slightly. Cook over low to medium heat. Avoid overcooking, as this can lead to a mushy texture.

When the eggplants are slightly tender, pour the prepared seasoning sauce over them. Increase the heat to high and stir-fry quickly for about 1-2 minutes, ensuring the sauce coats the eggplant evenly and absorbs into it. Be watchful to prevent the sauce from burning.

Once the sauce has thickened and coated the eggplant, and most of the liquid has evaporated, turn off the heat. Sprinkle with toasted sesame seeds and give it a final mix. Your delicious stir-fried eggplant is ready!
