Main Ingredients

  • 4 sheets of square fish cake (approx. 200g)
  • 2 Korean green chilies (Cheongyang peppers)
  • 2 Tbsp glutinous rice flour
  • 1 egg
  • 3 Tbsp cooking oil

Soy Sauce Dipping Sauce

  • 2 Tbsp dark soy sauce
  • 0.5 Tbsp vinegar
  • 0.5 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Step 1

First, prepare the fish cakes. Cut each of the 4 square fish cakes into 4 bite-sized pieces. Remove the stems from the 2 Korean green chilies, wash them thoroughly, and mince them very finely. If you prefer less spiciness, you can adjust the amount or omit the chilies.

Make the egg wash: Crack 1 egg into a bowl and whisk it until smooth using a fork or whisk. Add the minced green chilies to the egg and mix well. This will infuse a subtle chili aroma, making the jeon even more flavorful.

Coat fish cakes with glutinous rice flour: Spread 2 tablespoons of glutinous rice flour on a wide plate or tray. Coat both sides of the quartered fish cakes evenly with the glutinous rice flour. Coating with glutinous rice flour helps the egg wash adhere better and results in a crispier exterior when cooked.

Dip in egg wash: Dip the glutinous rice flour-coated fish cakes into the prepared egg wash, ensuring they are evenly coated on both sides. Aim for a thin coating of egg wash.

Frying the jeon (Part 1): Heat a frying pan over medium heat and add about 3 tablespoons of cooking oil. Once the oil is moderately hot, carefully place the egg-washed fish cakes into the pan, arranging them neatly. Make sure to leave some space between them so they don’t stick together.

Frying the jeon (Part 2): Once one side of the fish cake is golden brown, flip it over and cook the other side until it’s also golden brown. Keep an eye on the heat to prevent burning. Cook for about 3-4 minutes on each side until the chewy fish cake jeon is perfectly done. Transfer the cooked jeon to a paper towel to drain any excess oil for a lighter finish.
