Main Ingredients

  • 10 fresh abalones
  • 3 dried or fresh shiitake mushrooms
  • 1 Korean green chili pepper (Cheongyang chili)
  • 1/2 red chili pepper
  • 10-20 ginkgo nuts (optional)

Flavorful Braising Sauce

  • 3 Tbsp soy sauce
  • 2 Tbsp honey or corn syrup
  • 1/2 Tbsp toasted sesame seeds (for garnish)
  • 1 tsp sesame oil (for garnish)
  • 200ml water

Cooking Instructions

Step 1

Carefully separate the abalone from its shell using a knife. Remove the hard mouth part and the innards. (The innards can be saved for making abalone porridge later.)

Rinse the cleaned abalone under cold running water. Use a toothbrush or the back of a knife to scrub away any black residue from the inside of the shell and the abalone’s surface. Rinse thoroughly.

To help the sauce penetrate and for a better presentation, score the abalone. Make shallow crosswise cuts on the wider side of the abalone. This scoring will allow the braising liquid to seep into the abalone, making it more tender and flavorful.

In a pot, combine the soy sauce, honey (or corn syrup), and water to create the braising sauce.

Add the prepared abalone, shiitake mushrooms (soaked if dried), deseeded green and red chili peppers, and ginkgo nuts to the sauce. Bring to a boil over high heat with the lid off. Once boiling, reduce the heat to medium and simmer for about 5 minutes. To enhance the spicy flavor and aroma from the Cheongyang chili, you can poke it a few times with a fork.

During the simmering process, spoon some of the braising liquid over the abalone intermittently. This basting technique ensures the sauce evenly coats and flavors the abalone, deepening its taste.

Once braised to perfection, let the abalone cool slightly before transferring it to an airtight container. Store it in the refrigerator. It can be enjoyed cold or gently reheated.
