Super Easy Shiitake Mushroom Jorim: A Healthy and Tasty Side Dish

Make a delicious jorim (braised dish) with shiitake mushrooms, which are rich in Vitamin D and great for your health! This jorim, with its chewy texture and deep savory flavor, is perfect as a side dish for rice or for your lunchbox. Prepare this satisfying side dish in advance and enjoy it little by little!
Main Ingredients- 200g fresh shiitake mushrooms
- 1 handful of Korean green chili peppers (about 10-15)
Braising Sauce- 1/2 cup water (100ml)
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp sesame oil (15ml)
- 1/2 cup water (100ml)
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp sesame oil (15ml)
Cooking Instructions
Step 1
First, wash the shiitake mushrooms clean, remove the stems, and slice the caps about 0.5cm thick. Wash the Korean green chili peppers, remove their tops, and slice them in half lengthwise.

Step 2
In a pot, combine 1/2 cup of water, 1 Tbsp of soy sauce, and 1 Tbsp of sesame oil. Stir well to create the braising sauce. Add all the prepared shiitake mushrooms to this sauce and bring it to a boil over high heat.

Step 3
Once the sauce boils, reduce the heat to medium-low and let the shiitake mushrooms simmer to absorb the flavors, about 5 minutes. When the mushrooms start to soak up the sauce, add the sliced Korean green chili peppers and gently stir just once to combine. Immediately cover the pot with a lid, reduce the heat to very low or turn it off, and let it steam for a few minutes to allow the chili peppers to cook until tender without becoming mushy (about 2-3 minutes).

Step 4
After the shiitake mushroom jorim has cooled slightly, transfer it to an airtight container and store it in the refrigerator. It’s delicious right away, but it becomes even chewier and more flavorful as it cools. Enjoy it on top of rice or as a versatile side dish for your lunchbox!
