I loved the texture of the various side dishes my mom used to make with sea mustard stems when I was little. When seasoned with a sweet and sour, chewy texture, it really stimulates the appetite and tastes delicious.

Main Ingredients

  • Salted Sea Mustard Stems 300g
  • 1/4 Onion
  • Scallions, to taste

Sweet and Sour Dressing

  • 1 Tbsp Sugar
  • 0.5 Tbsp Minced Garlic
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 0.5 Tbsp Sesame Oil
  • 1 Tbsp Mirin (or cooking wine)
  • Sesame Seeds, generous amount
  • Pinch of Black Pepper

Cooking Instructions

Step 1

It’s crucial to remove the saltiness from the salted sea mustard stems. First, rinse them thoroughly under running water 2-3 times. Then, fill a bowl with plenty of water and soak the sea mustard stems for about 30 minutes to hydrate them. (If the saltiness remains, it will be difficult to eat, so be sure to soak them sufficiently!)

Thinly slice the onion and thinly slice the scallions. (You can also use frozen scallions.)

Once the sea mustard stems are well-soaked, blanch them briefly in boiling water for just 20-30 seconds. Be careful not to overcook, as they can become tough.

Immediately rinse the blanched sea mustard stems under cold water to cool them down (a cold water shower!). Squeeze out any excess water and cut them into bite-sized pieces.

Now, let’s make the delicious dressing. In a bowl, combine 1 Tbsp sugar, 0.5 Tbsp minced garlic, 1 Tbsp gochujang, 1 Tbsp gochugaru, 0.5 Tbsp sesame oil, and 1 Tbsp mirin. Add a pinch of black pepper.

In a large bowl, combine the prepared sliced onion and scallions with the squeezed sea mustard stems and the dressing. Gently mix everything together with your hands until well combined. Finish by sprinkling a generous amount of sesame seeds. This creates a perfectly sweet and sour, delicious side dish that truly awakens your appetite. It’s fantastic as a side dish for rice or as a snack!
