Hello everyone! Today, I’m sharing a recipe for braised konjac, which is low in calories and wonderfully chewy. You can make a fantastic side dish with simple ingredients.

Main Ingredients

  • 5 slices of konjac
  • 1/4 block of tofu
  • A little bit of tteokbokki rice cakes
  • 1 king oyster mushroom

Cooking Instructions

First, we’ll give the konjac a pretty shape to make this dish even more appealing.

Slice the konjac into about 1cm thick pieces. Then, make a shallow cut, about 1cm deep, horizontally across the cut surface. Be careful not to cut too deep, as the konjac might tear during cooking.

Tuck one end of the konjac through the slit you made to create a knot-like shape. This makes the konjac look interesting and unique. Repeat this process for all the konjac slices.

In a pot, add enough water and about 1-2 tablespoons of vinegar. Once the water boils, add the shaped konjac and blanch for 2-3 minutes. This step helps remove any unpleasant smell from the konjac and improves its chewy texture.

Remove the blanched konjac, and in the same boiling water, briefly blanch the tteokbokki rice cakes and the tofu. Blanch the rice cakes until they are soft, and handle the tofu gently to prevent it from breaking apart.

Trim the bottom of the king oyster mushroom and slice it into bite-sized pieces, about 1cm thick. You can use just the stem, or include the cap for extra flavor.

Gently press the blanched tofu to remove excess water, then cut it into bite-sized pieces, similar in size to the konjac. Avoid cutting them too small, as they might crumble during the cooking process.

In a small bowl, combine soy sauce, minced garlic, oyster sauce, sesame oil, and oligosaccharide. Mix thoroughly with a spoon to create the delicious braising sauce. Adjust the seasoning to achieve a good balance of sweet and savory flavors.

Heat a frying pan over medium heat. Add the prepared konjac, blanched rice cakes, cut tofu, and sliced king oyster mushroom. Pour in all of the prepared braising sauce.

Using a spatula or spoon, stir the ingredients continuously to prevent them from burning. Cook until the sauce has reduced and evenly coated all the ingredients. Once the sauce is almost reduced, stir in 1 tablespoon of perilla seeds powder and mix well again. The perilla seeds powder will add a nutty flavor and mellow out the saltiness.

Reduce the heat to low and continue to stir for another 1-2 minutes, ensuring the sauce doesn’t burn. This allows the konjac to absorb the flavors fully.

Turn off the heat and serve the finished braised konjac on a plate. Enjoy this delicious and healthy side dish!
