Simple Dried Shredded Squid Pancake Recipe
Turn your common side dish, dried shredded squid (jinmi-chae), into a delightful savory pancake! These are perfect for a quick snack for kids or a tasty accompaniment to drinks when you’re craving something savory. Enjoy the chewy texture and sweet flavor!
Main Ingredients- Dried shredded squid (jinmi-chae) 80g
Pancake Batter Ingredients- 3 Tbsp flour (all-purpose or pancake mix)
- 1 egg
- 2 Tbsp water
- 1 pinch salt
For Frying- 3-4 Tbsp cooking oil

Cooking Instructions
Step 1
Gently soak the dried shredded squid (80g, about 1 small package) in cold water for 3-5 minutes until slightly softened. Be careful not to soak for too long, as it might become too bland.
Step 2
While the squid is soaking, thinly julienne about 10g of green onion. This adds color and texture to the pancake. (Optional: You can omit this if you prefer.)
Step 3
Thinly julienne about 10g of carrot.

Drain the softened dried shredded squid thoroughly in a sieve. Once the water is removed, use scissors to cut the squid into bite-sized pieces, roughly the same length as the julienned carrots.

In a large bowl, combine the drained dried shredded squid, julienned carrots, and chopped green onions.

Now, let’s make the batter. Add 3 tablespoons of flour (or pancake mix), 1 egg, 2 tablespoons of water, and a pinch of salt to the bowl. Mix everything well until combined.

Once all the ingredients are well mixed with the batter, your dried shredded squid pancake mixture is ready! Now it’s time to cook them to perfection.

Heat a frying pan over medium heat and add 3-4 tablespoons of cooking oil. Scoop the squid mixture by the tablespoonful and drop them onto the hot pan, forming small, flat pancakes. Fry for about 1-2 minutes per side until golden brown. Be mindful of the heat as the squid can brown quickly, so adjust the flame as needed to prevent burning.
