  • 100g dried radish strips (muchim용)
  • 5 stalks scallions

Seasoning

  • 3 Tbsp chili powder (gochugaru)
  • 3 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp soy sauce (jin ganjang)
  • 2 Tbsp plum extract (maesil cheong)
  • 3 Tbsp corn syrup (mulyeot)
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds

Cooking Instructions

Step 1

The key to a great dried radish salad is the seasoning! First, combine 3 Tbsp chili powder, 3 Tbsp anchovy sauce, 1 Tbsp soy sauce, 2 Tbsp plum extract, 3 Tbsp corn syrup, 1 Tbsp sugar, and 1 Tbsp minced garlic in a bowl. Mix well until the sugar is dissolved. Making the sauce in advance makes the final assembly much easier.

Now, let’s prepare the dried radish. Before soaking, gently rub the dried radish strips with your hands a couple of times under running water. This step is crucial for removing any residual dried vegetable smell and ensuring a clean, fresh taste.

After washing, soak the dried radish strips in fresh water for 30 minutes. They will absorb the water and become tender. The soaking time might vary slightly depending on how thoroughly the radish was dried. If they seem too hard, you can soak them a little longer.

Once softened after 30 minutes, drain the dried radish strips thoroughly. Squeeze them firmly with your hands until no more water comes out. This step prevents the salad from becoming watery and helps maintain its chewy texture.

Cut the scallions into about 4cm lengths. In a mixing bowl, add the squeezed dried radish, chopped scallions, and the pre-made seasoning sauce.

Now, it’s time to mix everything together! Gently toss and massage the ingredients with your hands, ensuring the vibrant red sauce coats the radish and scallions evenly. Rubbing firmly helps the flavors penetrate the radish. Transfer to a serving dish and sprinkle with sesame seeds for a final touch. Your delicious dried radish salad is ready!
