Chewy and Delicious Dried Codfish Stew

Try making a delicious codfish stew using dried codfish, which offers a wonderfully chewy texture unlike fresh cod. This recipe uses simple seasonings to bring out a deep flavor in your dried codfish stew.
Main Ingredients- 2 pieces dried codfish
Seasoning Ingredients- 1 white part of leek
- 3 cloves garlic
- 1/2 red chili pepper
- 1 green chili pepper (jalapeño or similar)
- 2 Tbsp soy sauce
- 1 Tbsp plum extract (maesilcheong)
- 1/2 Tbsp ginger extract
- 2 Tbsp water
- 1 white part of leek
- 3 cloves garlic
- 1/2 red chili pepper
- 1 green chili pepper (jalapeño or similar)
- 2 Tbsp soy sauce
- 1 Tbsp plum extract (maesilcheong)
- 1/2 Tbsp ginger extract
- 2 Tbsp water
Cooking Instructions
Step 1
First, trim off the fins from the dried codfish. Then, cut each piece in half so they fit well into your pot. To help the seasonings penetrate better, score the codfish with shallow cuts.
Step 2
In a pot, combine 1.5 cups of water and 1/2 cup of soju. Bring to a rolling boil over high heat. Once boiling, add the dried codfish and steam it with the lid off. Steaming with the lid open helps to maintain the chewy texture of the codfish.
Step 3
While the codfish is steaming, prepare the seasonings. Chop the white part of the leek, garlic cloves, red chili pepper, and green chili pepper into relatively large pieces. In a bowl, mix together 2 Tbsp soy sauce, 1 Tbsp plum extract, 1/2 Tbsp ginger extract, and 2 Tbsp water to create your delicious sauce.
Step 4
Once the dried codfish is tender and steamed through, turn off the heat and let it cool slightly. Be careful not to handle it while it’s too hot, as it might fall apart.
Step 5
Arrange the slightly cooled dried codfish attractively on a serving plate. Generously spoon the prepared sauce over the fish. This combination of chewy dried codfish and flavorful sauce will create a wonderful dish.
