I bought two dried beltfish from the traditional market. While fresh fish is always good, dried fish has a wonderfully chewy texture that makes it extra special! Today, we’ll be making a delicious stew using this dried beltfish, perfect for making your mealtime extra satisfying. This dried beltfish stew is sure to elevate your table, whether for a special occasion or an ordinary day. Let’s get started!

Main Ingredients

  • 2 Dried Beltfish
  • 1 ‘Jongji’ of water (approx. 150ml)

Stew Seasoning

  • Pinch of black pepper
  • 1 tsp sugar
  • 1 tsp minced garlic
  • 1 Tbsp chopped green onion
  • 1 Tbsp red pepper flakes (gochugaru)
  • 2 Tbsp red pepper paste (gochujang)
  • 2 Tbsp soy sauce for soup (guk-ganjang)

Cooking Instructions

First, rinse the two dried beltfish thoroughly to remove any impurities. Then, cut them into bite-sized pieces (about 5-7cm). Cutting them like this makes them easier to cook and helps the seasoning penetrate better.

Now, it’s time to make the delicious stew seasoning. In a wide bowl or on a plate, combine a pinch of black pepper, 1 tsp sugar, 1 tsp minced garlic, 1 Tbsp chopped green onion, 1 Tbsp gochugaru, 2 Tbsp gochujang, and 2 Tbsp guk-ganjang.

Using a spoon or a whisk, mix all the seasoning ingredients together thoroughly until well combined. This will create a single, flavorful seasoning paste.

Prepare a pot with some depth. Arrange the cut dried beltfish neatly at the bottom of the pot. Then, pour the prepared seasoning mixture evenly over the fish. It’s important to ensure the seasoning coats every part of the fish.

Now, place the pot on the stove over high heat and bring it to a boil. Once the liquid starts boiling, reduce the heat to medium-low. Cover the pot and let it simmer for about 3 minutes. In between, occasionally spoon some of the sauce over the fish. This process will deepen the flavor and allow the seasoning to penetrate further.

Your dried beltfish stew is now ready! Transfer the deliciously simmered beltfish to a serving plate. Finally, garnish with a sprinkle of chopped green onion and toasted sesame seeds. A little drizzle of perilla oil will add an extra layer of flavor, completing your chewy and tasty dried beltfish stew. Enjoy it with a bowl of hot rice!
