Today, I’m excited to share a recipe for Buchu Jangtteok, a delightful Korean pancake featuring chewy chives and a flavorful blend of gochujang and doenjang. This simple yet special dish is perfect as a side dish for rice or as a tasty appetizer. Let’s get started on making this comforting Buchu Jangtteok, especially perfect for a rainy day!
Main Ingredients
- 1 bunch fresh chives (about 100g)
- 1 cup pancake mix (about 100g)
- 1 cup water (about 200ml)
- 1 Tbsp gochujang (Korean chili paste)
- 1/3 Tbsp doenjang (Korean soybean paste)
- 1 handful frozen mixed seafood (about 100g)
Cooking Instructions
Step 1
First, thoroughly wash the fresh chives under running water to remove any dirt or debris. Once clean and excess water is drained, cut them into bite-sized pieces, about 3-4 cm long.
Step 2
Rinse the frozen mixed seafood under cold water to thaw. There’s no need for extra preparation; simply thaw and drain any excess water. Add the thawed seafood to the bowl with the chopped chives.
Step 3
In a small bowl, combine 1 tablespoon of gochujang and 1/3 tablespoon of doenjang. Pour in 1 cup of water and whisk well with a fork or whisk until smooth, ensuring there are no lumps. This creates your flavorful sauce base.
Step 4
Add 1 cup of pancake mix to the bowl containing the chives and seafood. Pour the prepared gochujang and doenjang sauce over the ingredients. Mix everything together thoroughly until the batter is well combined with the chives and seafood. Adjust consistency if needed; it should be thick but pourable.
Step 5
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Ladle portions of the batter onto the hot pan to form pancakes.
