Main Ingredients
- 1 Acorn Jelly (approx. 300-400g)
- 1 Cucumber
- 1/3 Carrot
Baek Jong-won’s All-Purpose Soy Sauce Dressing
- 2 handfuls Green Onions or White Parts of Leeks (finely chopped)
- 1 Chili Pepper (finely chopped)
- 1 Tbsp Minced Garlic
- 5-6 Tbsp Soy Sauce
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 1.5 Tbsp Sesame Oil
- 0.5 Tbsp Toasted Sesame Seeds
- 1/3 Tbsp Sugar
- 2 handfuls Green Onions or White Parts of Leeks (finely chopped)
- 1 Chili Pepper (finely chopped)
- 1 Tbsp Minced Garlic
- 5-6 Tbsp Soy Sauce
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 1.5 Tbsp Sesame Oil
- 0.5 Tbsp Toasted Sesame Seeds
- 1/3 Tbsp Sugar
Cooking Instructions
Step 1
First, prepare about two handfuls of green onions or the white parts of leeks. Wash them thoroughly and finely chop them into pieces about 0.5cm thick. Chopping them this way allows the seasoning to penetrate evenly, making it more delicious.
Step 2
Optionally, finely chop 1 chili pepper to add a spicy kick. Using a Cheongyang chili pepper will add a sharp heat, while a red chili pepper will add color.
Step 3
Now, let’s make Baek Jong-won’s all-purpose soy sauce dressing. In a bowl of appropriate size, add the chopped green onions and chili peppers, and then add 1 tablespoon of minced garlic for added flavor.
Step 4
Pour in 5-6 tablespoons of soy sauce, enough to cover about half of the ingredients. You can adjust the amount of soy sauce based on the quantity of ingredients and your personal preference.
Step 5
Next, add 1.5 tablespoons of gochugaru for spiciness, 1/3 tablespoon of sugar to add a touch of sweetness, 1.5 tablespoons of sesame oil for a nutty aroma, and finally, 0.5 tablespoon of toasted sesame seeds for extra flavor. Mix everything well with a spoon to complete the dressing.
Step 6
For a crunchy texture, wash 1 cucumber thoroughly, remove the ends, and julienne it into slices about 0.5cm thick. The crispiness will significantly enhance the overall texture of the salad.
Step 7
Julienne about 1/3 of a carrot into similarly sized strips as the cucumber. Carrots add a vibrant color, making the salad look even more appetizing.
Step 8
If your acorn jelly has become firm, boil it in water for about 10 minutes. This process will quickly make the firm acorn jelly soft and pliable, making it much easier to mix. (Skip this step if your acorn jelly is already soft).
Step 9
Cut the prepared acorn jelly into bite-sized pieces, for example, about 2-3cm in length. Cutting them not too thinly ensures a satisfying chew.
Step 10
In a large bowl, combine the cut acorn jelly, julienned cucumber, and carrot. Add the prepared Baek Jong-won’s all-purpose soy sauce dressing. Instead of adding all the dressing at once, it’s best to taste as you go and add more seasoning gradually to achieve your desired flavor. Gently mix everything together so the dressing coats all the ingredients evenly.
Step 11
And there you have it! Your delicious acorn jelly salad, made with Baek Jong-won’s all-purpose soy sauce dressing, is ready. The combination of chewy acorn jelly, fresh vegetables, and savory dressing is truly exceptional. Enjoy your meal!
