Similar to cockles but with a distinct flavor and size.
Main Ingredients- 500g fresh Ark Clams (Pijogae)

Cooking Instructions
Step 1
First, rinse the fresh ark clams thoroughly under running water to remove any surface dirt. Then, place them in a bowl with plenty of water and let them purge for about 30 minutes to 1 hour. This helps them release any sand or grit from their insides, ensuring a cleaner taste.
Step 2
Pour enough water into a steamer or pot to generously cover the clams. Bring the water to a rolling boil over high heat. Ensuring the water is vigorously boiling is key to perfectly cooked clams.
Step 3
Once the water is at a rolling boil, carefully add the purged ark clams to the pot.
Step 4
As the clams steam, you’ll notice them opening their shells and releasing any remaining impurities into the water. This is a good sign that the clams are fresh and cooking well.
Step 5
As soon as the clams open their shells, immediately turn off the heat. Gently remove the clams and quickly rinse them under cold running water. Be careful not to rinse them for too long, as this can wash away their natural sweetness. A quick rinse to remove surface residue is sufficient.
Step 6
Prepare the steamed clams for serving. Detach one side of the shell to expose the plump, chewy clam meat. Arrange the clam meat attractively on a serving plate.
Step 7
Make the delicious seasoning sauce. In a small bowl, combine the soy sauce, gochugaru, finely chopped scallions, and sesame seeds. Mix everything well. For an extra flavor boost, you can optionally add a little minced garlic or sesame oil.
Step 8
Spoon the prepared seasoning sauce generously over the arranged clam meat on the plate. Your wonderfully chewy and flavorful steamed ark clams are now ready to be enjoyed! They are best served immediately while warm.
