Cooking Instructions
Step 1
First, prepare 4 soft, steamed potatoes. Soak 1/2 cup of rice in cold water for at least 30 minutes. Soaking the rice in advance will make the batter much smoother and chewier.
Step 2
Next, finely mince 40g of carrots, which will add a crisp texture and vibrant color. Also, prepare 2 Tbsp of chopped green onions for a fragrant aroma.
Step 3
Peel the 4 steamed potatoes and mash them thoroughly with a masher or fork until smooth and lump-free. Mashing while the potatoes are still warm makes the process much easier.
Step 4
Place the well-soaked 1/2 cup of rice into a blender and add 80-100ml of water. Grinding it finely in the blender will break down the rice grains, contributing to the chewy texture.
Step 5
Add the mashed steamed potatoes to the finely ground rice batter in the blender and blend them together. Continue blending until the potatoes and rice are well incorporated without any lumps.
Step 6
Transfer the blended potato and rice mixture to a bowl. Add the finely chopped carrots and 2 Tbsp of chopped green onions, then mix well to combine all the ingredients.
Step 7
Finally, add 1 tsp of salt to season the batter and stir everything thoroughly until evenly mixed. This will create a wonderfully chewy and delicious potato pancake batter. If the consistency is too thick, you can add a little more water.
Step 8
Heat 3 Tbsp of cooking oil in a frying pan over medium heat. Use a tablespoon to scoop the potato pancake batter and place it in the pan, forming round shapes. Be mindful of the heat to prevent burning.
Step 9
Once the edges of the potato pancake turn golden brown and bubbles start to appear on the surface, carefully flip it over using a spatula or chopsticks. Since it’s a steamed potato batter, it may take a little time for the inside to cook through.
Step 10
If you have a lot of batter left, it’s easier to flip if you form it into one large pancake. If making multiple pancakes, try to keep their sizes consistent.
Step 11
Once both sides are golden brown and crispy, plate the pancake nicely. Your chewy and savory ‘Steamed Potato Pancake’ is ready! It’s best enjoyed warm. It also makes a great snack or a simple meal. Enjoy your delicious creation!
