Delicious Stir-fried Shiitake Mushrooms Made Easy
This shiitake mushroom stir-fry is wonderfully chewy with a deep, savory flavor. It’s perfect as a side dish for rice or as a topping for a donburi (rice bowl). It’s a crowd-pleasing dish that’s simple to make!
Main Ingredients
- 300g Shiitake mushrooms
- 1 stalk Green onion
- 1/2 Onion
- 1 handful Shredded carrot (approx. 50g)
- 1 Tbsp Minced garlic
Seasoning & Sauces
- 1 Tbsp Cooking oil
- 2 Tbsp Perilla oil (or sesame oil)
- 1 Tbsp Soy sauce
- 1 Tbsp Fish sauce (or Korean soup soy sauce)
- 1 Tbsp Oyster sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Ground perilla seeds
- 1 Tbsp Sesame oil or sesame seeds
- 1 Tbsp Cooking oil
- 2 Tbsp Perilla oil (or sesame oil)
- 1 Tbsp Soy sauce
- 1 Tbsp Fish sauce (or Korean soup soy sauce)
- 1 Tbsp Oyster sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Ground perilla seeds
- 1 Tbsp Sesame oil or sesame seeds
Cooking Instructions
Step 1
First, prepare your fresh shiitake mushrooms. Gently wipe any dirt off the mushroom caps with a paper towel. Trim off the tough, woody ends of the stems.
Step 2
Slice the prepared shiitake mushrooms into bite-sized pieces (about 1-1.5cm thick). If you prefer a softer texture, you can shred the stems lengthwise and stir-fry them along with the caps for even more flavor.
Step 3
Prepare the other vegetables. Slice the green onion diagonally and thinly slice the onion. Thinly shred the carrot as well; this adds a lovely color and balances the flavors.
Step 4
Heat a wide pan over medium heat. Add 1 tablespoon of cooking oil and 2 tablespoons of perilla oil. Once the oil is warm, add the minced garlic and sliced green onion. Sauté for about 1 minute until fragrant, infusing the oil with their aromas.
Step 5
Once the garlic and green onion are fragrant, add the sliced onion and shredded carrot. Stir-fry for 1-2 minutes until the vegetables are slightly softened. This will release their natural sweetness and enhance the overall flavor of the dish.
Step 6
Now, add the prepared shiitake mushrooms to the pan. Stir-fry over medium heat for 2-3 minutes. As the mushrooms cook, their moisture will release, and they will begin to develop a pleasant chewy texture.
Step 7
Once the shiitake mushrooms are somewhat cooked, pour in 1/2 cup (approx. 100ml) of water. Stir-frying with a bit of water will make the mushrooms even more tender and help the seasonings absorb better. Continue to cook for another 2-3 minutes until the water has reduced.
Step 8
During the stir-frying process, add 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of mirin. Stir well to combine. Finally, add 1 tablespoon of ground perilla seeds and stir-fry once more to add a nutty richness.
Step 9
When all the ingredients are well-cooked and the sauce has thickened, turn off the heat. Finish by drizzling with 1 tablespoon of sesame oil or sprinkling with sesame seeds for a fragrant touch. Your delicious shiitake mushroom stir-fry is ready! It’s also excellent served over a bowl of hot rice.
