I’ve created a simple yet flavorful side dish by stir-frying them, highlighting their chewy texture and deep aroma.   • 18 fresh shiitake mushrooms
  • 1/2 onion
  • 1/3 carrot

Stir-fry Seasoning

  • 4 Tbsp cooking oil
  • 3 Tbsp minced green onion
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

First, let’s prepare the sauce for our delicious shiitake mushroom stir-fry! In a paper cup, combine 2/3 cup of water with 2 Tbsp soy sauce, 2 Tbsp oyster sauce, 1.5 Tbsp sugar, and 1 Tbsp cornstarch. Whisk well until there are no lumps. The sugar and oyster sauce will add sweetness and umami, while the cornstarch will help the sauce coat the ingredients evenly at the end.

Now, let’s clean the shiitake mushrooms. Gently wipe the caps with a damp kitchen towel or quickly rinse them under running water. For the inside of the caps, you can gently brush away any dirt with a soft brush to avoid damaging the mushrooms. This method helps preserve their freshness and texture.

To separate the mushroom stems, gently twist them by hand. Trim off the tough ends of the stems, and you can use the remaining stem as is or cut it into bite-sized pieces.

Trim off the very end of the tougher stems and then either tear them or slice them into pieces you find easy to eat. Slice the mushroom caps about 0.5cm thick. This thickness will give them a satisfying chewiness when stir-fried.

Julienne the carrot and onion into thin strips, similar in thickness to the shiitake mushrooms. The carrots will add color, and the onions will contribute sweetness and flavor. Cutting them into strips ensures they cook evenly with the mushrooms.

Let’s start building a deep, delicious flavor! Heat 4 Tbsp of cooking oil in a pan over medium-low heat. Add 3 Tbsp of minced green onion and 1/2 Tbsp of minced garlic. Slowly stir-fry them until they become fragrant and lightly golden. This will infuse the oil with a wonderful aroma, elevating the taste of the mushroom stir-fry.

Once the aroma of the garlic and green onion is released, add the shiitake mushroom stems and the julienned carrots to the pan. Stir-fry them over high heat quickly. The key here is to cook them just enough so the flavors meld into the stems.

When the stems and carrots are slightly cooked, add the sliced mushroom caps and the julienned onions. Stir-fry everything together. It’s important to stir-fry the mushroom caps over high heat to quickly evaporate excess moisture, which helps maintain their chewy texture.

When the mushroom caps have softened about halfway and become slightly translucent, give the prepared sauce a good stir to mix in any settled cornstarch. Then, pour the sauce into the pan. Stirring the sauce before adding it is crucial to prevent the cornstarch from clumping and ensure an even coating.

Finally, quickly stir everything with a spatula, ensuring the sauce coats all the ingredients evenly. Avoid overcooking, as it can make the mushrooms lose their chewiness. Stir-fry just until the sauce thickens slightly and coats the ingredients beautifully. This finishes your delicious shiitake mushroom stir-fry! Sprinkle with sesame seeds for an extra touch of flavor and visual appeal. Serve it over warm rice and enjoy!
