Main Ingredients

  • King oyster mushrooms 1 pack (300g)
  • Tofu 1 block (firm or stewing type)
  • Onion 1/2 medium
  • Green onion (scallions) a little
  • Green chili pepper 1
  • Red chili pepper a little
  • Olive oil 1 Tbsp
  • Black pepper a pinch
  • Sesame seeds a pinch

Seasoning Ingredients

  • Soy sauce 2 Tbsp
  • Oyster sauce 0.3 Tbsp (approx. 1/3 Tbsp)
  • Minced garlic 0.5 Tbsp (approx. 1/2 Tbsp)
  • Corn syrup 1 Tbsp (adjust sweetness to taste)
  • Water 6 Tbsp

Cooking Instructions

First, prepare the king oyster mushrooms. Trim off any dirty parts from the base of the mushrooms. Then, tear them into bite-sized pieces by hand; this helps enhance their chewy texture.

In a small bowl, combine the soy sauce (2 Tbsp), oyster sauce (0.3 Tbsp), minced garlic (0.5 Tbsp), corn syrup (1 Tbsp), and water (6 Tbsp). Whisk well until the seasoning ingredients are evenly mixed to create the sauce. Having the sauce ready beforehand streamlines the cooking process.

Rinse the tofu gently under running water and pat it dry. Place the tofu on paper towels or parchment paper. To slice the tofu evenly, place two chopsticks on either side of the tofu block. This will act as a guide, allowing you to cut the tofu into approximately 1.5cm thick pieces without cutting all the way through.

Lightly brush the cut side of the tofu with olive oil. Sprinkle a tiny pinch of salt and black pepper over the tofu for a light seasoning. This step adds extra flavor to the tofu.

Place the seasoned tofu in the air fryer basket and cook at 200°C (390°F) for 20 minutes. The tofu will become golden brown, slightly firm on the outside, and tender on the inside, making it perfect for stewing.

While the tofu is cooking, slice the onion into strips. Slice the green onions diagonally, and finely chop the green and red chili peppers (removing seeds if desired). Adjust the amount of green chili peppers if you prefer it spicier.

Prepare a frying pan or pot with some depth. Arrange the sliced onions and diagonally cut green onions along the sides of the pan. Place the golden-brown tofu in the center.

Fill the spaces around the tofu with the torn king oyster mushrooms. The mushrooms will absorb the sauce as they cook, becoming very flavorful.

Pour the prepared sauce evenly over the tofu and mushrooms using a spoon. Ensure the sauce coats all the ingredients.

Cover the pan and simmer over medium-low heat for about 5-7 minutes, allowing the mushrooms to cook through and the flavors to meld. Be careful not to overcook, as it might become too salty. Check periodically.

Once the mushrooms and tofu have absorbed the sauce nicely, sprinkle the chopped green and red chili peppers over the top. Finally, garnish with toasted sesame seeds for added aroma and flavor.
