Chewy and Aromatic Dried Deodeok Stir-fry

I made a delicious deodeok stir-fry using precious dried deodeok sent from Gangwon-do. Dried deodeok has a unique charm different from fresh deodeok! I carefully prepared it to be moist and well-seasoned, creating a high-quality side dish boasting deep flavor and chewy texture. It’s a real rice thief!

Main Ingredients

  • Dried Deodeok 50g

Seasoning Ingredients

  • Gochujang (Korean chili paste) 3 Tbsp
  • Soy sauce 1.5 Tbsp
  • Minced garlic 1.5 Tbsp
  • Sugar 2 Tbsp
  • Oligosaccharide (corn syrup) 2 Tbsp
  • Fine chili powder 1.5 Tbsp

Cooking Instructions

Step 1

Before cooking, immerse the dried deodeok in plenty of water and soak for 1 hour. This will soften the tough texture, making it much easier to prepare.

After soaking, rinse the deodeok thoroughly under running water to remove any bitterness. Then, squeeze out as much water as possible. Squeezing out the water well helps the seasoning penetrate better.

In a large bowl, combine gochujang, soy sauce, minced garlic, sugar, oligosaccharide, and chili powder. Mix well until smooth, creating a delicious seasoning paste. Ensuring the seasoning is well-mixed is key for even coating.

Put on disposable gloves and add the soaked deodeok to the seasoning bowl. Gently knead with your hands to ensure the seasoning thoroughly permeates the deodeok. It’s important that all pieces are evenly coated.

Here’s the deodeok after being well-marinated. When you lightly press it, the moist seasoning clinging to it looks appetizing.

Now, heat a frying pan over medium heat, then add a generous amount of oil and reduce the heat to low. Place the seasoned deodeok in the pan and stir-fry until golden brown. Flipping occasionally to prevent burning will help cook it evenly and keep it moist inside.

Arrange the well-cooked deodeok stir-fry attractively on a plate. Finish by sprinkling chopped green onions and sesame seeds. This adds a wonderful aroma and nutty flavor, completing this delicious dish. Enjoy it with a warm bowl of rice!
