Main Ingredients- 1 block Acorn Jelly
- 2 handfuls Crown Daisy (generous amount)
- 1 handful Stone Parsley
- 1/4 Onion
- 1/2 Cucumber
- A little shredded Carrot
- 1/2 Red Chili Pepper (for color)
Flavorful Dressing- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Minced Garlic
- 2 Tbsp Omija Vinegar (or Plum Extract)
- 1 Tbsp Sugar
- 1 Tbsp Pineapple Vinegar (or regular vinegar)
- 1.5 Tbsp Sesame Oil
- 0.5 Tbsp Toasted Sesame Seeds
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Minced Garlic
- 2 Tbsp Omija Vinegar (or Plum Extract)
- 1 Tbsp Sugar
- 1 Tbsp Pineapple Vinegar (or regular vinegar)
- 1.5 Tbsp Sesame Oil
- 0.5 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
To enjoy your acorn jelly with a softer texture, carefully trim off the hard bottom layer thinly, like filleting. Then, using a jelly cutter or a knife, slice it into bite-sized pieces (about 1 to 1.5 cm thick). This makes it easier to pick up with chopsticks and allows the dressing to be absorbed better, resulting in a more delicious dish.
Step 2
Let’s prepare the fresh vegetables! First, soak the crown daisy, stone parsley, onion, cucumber, carrot, and red chili pepper in cold water with 1-2 tablespoons of vinegar for about 5 minutes. Then, rinse them under running water. This step helps to freshen the vegetables and remove any residual pesticides. After thoroughly draining the water, cut the crown daisy into lengths of 4-5 cm. Slice the onion, cucumber, and carrot into thin julienne strips. (You can also slice the cucumber into half-moons). Remove the seeds from the red chili pepper and slice it diagonally for a beautiful color. Now, let’s make the delicious dressing! In a bowl, combine 3 tablespoons of soy sauce, 2 tablespoons of gochugaru, 1 tablespoon of minced garlic, 2 tablespoons of omija vinegar (or plum extract), 1 tablespoon of sugar, 1 tablespoon of pineapple vinegar (or any vinegar you have on hand), 1.5 tablespoons of sesame oil, and 0.5 tablespoon of toasted sesame seeds. Mix everything thoroughly with a spoon. If you don’t have omija vinegar, plum extract is a great substitute, and you can use any type of vinegar, like fruit vinegar or regular brown rice vinegar.
Step 3
Place all the prepared vegetables into a large mixing bowl. Adding the vegetables first helps prevent the acorn jelly from breaking apart when you mix everything together.

Add half of the prepared dressing to the bowl with the vegetables. Gently toss the vegetables until they are lightly coated and slightly softened. This helps the vegetables absorb the flavors while retaining their fresh crunch.

Gently push the lightly dressed vegetables to one side of the bowl. In the empty space next to them, add the prepared acorn jelly. Pour the remaining half of the dressing over the acorn jelly and gently toss it.

Now, it’s time to combine the acorn jelly and vegetables. Since both are quite delicate, the key is to mix them gently. Avoid vigorous stirring. Use a spatula to carefully fold and mix the ingredients, as if you were gently folding them with your hands.
