Main Ingredients- 1 block Acorn Jelly (Dotori Muk, approx. 300-400g)
- 1/3 Cucumber
- 1/4 Onion
- 3 Perilla Leaves (Kkaennip)
- A small bunch of Crown Daisy (Shunggak, optional)
- A pinch of toasted sesame seeds
Seasoning Ingredients- 3 Tbsp Soy Sauce
- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1/2 Tbsp Minced Garlic
- 2/3 Tbsp Sugar
- 1 Tbsp Sesame Oil
- 3 Tbsp Soy Sauce
- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1/2 Tbsp Minced Garlic
- 2/3 Tbsp Sugar
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion. Cut the cucumber in half lengthwise, then slice it diagonally about 0.5cm thick. Stack the perilla leaves, roll them up, and slice them into 0.5cm strips. Remove the tough stems from the crown daisy and roughly chop them into bite-sized pieces.
Step 2
Cut the acorn jelly into 1cm thick slices. This thickness allows the jelly to hold its shape while absorbing the flavors of the seasoning. Avoid cutting it too thinly, as it might break apart.
Step 3
In a small bowl, combine the soy sauce, red pepper flakes, minced garlic, sugar, and sesame oil. Whisk them together with a spoon to create a delicious seasoning sauce. You can adjust the sweetness and saltiness to your preference.
Step 4
In a larger bowl, add the sliced acorn jelly and all the prepared vegetables. Pour the prepared seasoning sauce over everything. Gently toss the ingredients with your hands to coat them evenly with the sauce. Finally, sprinkle with toasted sesame seeds to complete this wonderfully chewy and flavorful acorn jelly salad! It’s perfect as a side dish or a delightful snack.
