A delicious acorn jelly salad that’s perfect for making when you’re on a diet. It’s satisfying yet light, making it an ideal healthy meal.
Main Ingredients- 1 block Acorn Jelly (Dotorimuk)
- 1 handful Salad Greens (mixed varieties)
- 1/2 Cucumber
- 1/2 Onion
- 1 Tomato (or cherry tomatoes)
- 3-4 Tbsp Pickled Radish Brine (or Soy Sauce + Vinegar + Sugar)
- 1-2 Tbsp Perilla Oil (Deulgireum)
- Pinch of Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
Rinse the acorn jelly under running water. Then, blanch it in boiling water for about 2 minutes. This step makes the jelly chewier and removes any impurities.
Step 2
Thinly slice the cucumber and onion. You can slice the cucumber into half-moons or thin rounds, and julienne the onion. Soaking them in cold water for a few minutes can enhance their crispiness.
Step 3
Drain the blanched acorn jelly and cut it into bite-sized pieces, approximately 1.5 cm thick. Cutting them slightly thicker will provide a more satisfying chew.
Step 4
In a bowl, combine the cut acorn jelly and sliced onion. Add 3-4 tablespoons of the pickled radish brine and gently mix. This step lightly removes the sharp taste from the onion and seasons the jelly. If you don’t have pickled radish brine, you can substitute with a mixture of soy sauce, vinegar, and a touch of sugar.
Step 5
Arrange the washed and dried salad greens on a large plate or in a bowl. Tear them by hand into manageable pieces. Drizzle 1-2 tablespoons of perilla oil over the greens for added aroma and flavor.
Step 6
Lightly sprinkle salt and black pepper over the salad greens. Gently toss with chopsticks to distribute the seasoning without bruising the leaves.
Step 7
Arrange the seasoned acorn jelly, sliced cucumber, and halved or sliced tomato pieces attractively over the salad greens. Add 1-2 tablespoons of the brine from the acorn jelly bowl to enhance the savory notes. If you are not using a separate dressing, you can add a bit more brine.
Step 8
Finally, spoon the stone crop dressing and honey-glazed black olives over the salad, scattering them evenly. Feel free to use your favorite dressing if you prefer. This combination of fresh vegetables, chewy acorn jelly, and flavorful toppings creates a healthy and delicious meal.
