Cooking Instructions
Step 1
Start by preparing one 400g package of acorn jelly. Remove the jelly from its packaging and slice it into bite-sized pieces, about 1.5cm thick and long. Avoid slicing it too thinly, as it can break easily.
Step 2
Bring a pot of water to a boil. Add the sliced acorn jelly and blanch it for about 3 minutes. This step helps remove any raw jelly smell and enhances its chewy texture.
Step 3
After blanching, immediately rinse the jelly under cold running water to maintain its firm texture. Then, drain it thoroughly in a colander. You can gently shake the colander to help remove excess water.
Step 4
Now, let’s prepare the vegetables. Thinly slice 50g of carrot and 50g of cucumber diagonally. Wash 7 leaves of lettuce, pat them dry, and then roughly chop them into large pieces.
Step 5
Time to make the delicious seasoning! In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp sugar, 1.5 Tbsp gochugaru (Korean chili flakes), and 0.5 Tbsp minced garlic. Mix well to create the dressing. You can substitute sugar with corn syrup if you prefer.
Step 6
Place the drained acorn jelly into a large mixing bowl. Add the prepared carrots and cucumbers (excluding the lettuce), along with the seasoning mixture. Gently toss to combine.
Step 7
Add 2 Tbsp of sesame oil for a rich aroma and 1 Tbsp of sesame seeds for a nutty flavor. It’s best to add sesame oil towards the end to preserve its fragrant scent.
Step 8
Gently mix the ingredients with your hands, being careful not to break the jelly. Ensure the seasoning is evenly distributed among the jelly and vegetables.
Step 9
Finally, add the roughly chopped lettuce and mix it in lightly. Adding the lettuce at the end helps keep its crisp texture.
Step 10
Give everything one last gentle toss, and your delicious acorn jelly salad is ready! The fresh and appetizing aroma is sure to make your mouth water.
Step 11
Your chewy and tender acorn jelly salad with crisp vegetables is complete. It’s the perfect, delightful treat to enjoy with makgeolli on a rainy day!
