Ingredients
  • 7 abalones
  • Abalone roe
  • Sesame oil
  • Salt
  • Sesame seeds
  • Cooked rice

Cooking Instructions

Step 1

First, prepare the abalone roe. Ensure it’s fresh and clean.

Step 2

Finely mince the abalone roe using a food processor or a knife. The finer it’s minced, the smoother the porridge will be. If you have a blender, it’s even easier!

Step 3

Prepare the abalone pieces for the porridge. It’s okay if they are small! Make sure to use fresh abalone.

Step 4

Set aside a few abalones for garnish, and thinly slice the rest. Thinly sliced abalone will be tender and enjoyable in the porridge.

Step 5

Heat about 1 tablespoon of sesame oil in a pot over medium-low heat. This will add a nutty aroma.

Step 6

Add the cooked rice and all the minced abalone roe to the pot. It’s important to mix them thoroughly.

Step 7

Stir the rice and abalone roe vigorously with a spatula or spoon. The key is to mash the rice grains as you stir, ensuring they are evenly mixed. Stir-frying like this will help break down the rice and make the porridge smoother.

Step 8

Drizzle in another tablespoon of sesame oil for extra richness. This helps to enhance the flavor and mask any potential fishiness from the roe.

Step 9

Add the thinly sliced abalone pieces to the pot. Gently mix them in with the rice and roe mixture.

Step 10

Pour in enough water to cover the rice, about 2 to 2.5 times the amount of rice. You can add more water later if needed to reach your desired consistency. Bring to a boil over high heat.

Once the porridge starts boiling, reduce the heat to medium-low and stir continuously to prevent sticking. Add a small pinch of salt for initial seasoning. Avoid adding too much salt at this stage.

Step 12

Continue to stir the porridge frequently, making sure to scrape the bottom of the pot to prevent it from burning. Cook until the rice grains break down and the porridge thickens to your liking. Patience is key!

Step 13

Once the porridge reaches your desired thick consistency, lower the heat to low. Cooking on low heat further prevents burning. Before serving, adjust the seasoning with salt to taste, then ladle into bowls and sprinkle generously with sesame seeds. Enjoy your delicious, warm abalone roe porridge!
