Muffin Ingredients- 1 pouch Muffin Mix (180g)
- 8 Roasted Chestnuts, peeled and chopped
- 1 Egg
- 6 Tbsp Melted Butter
- 4 Tbsp Milk
- 4 Disposable Muffin Cups
Cooking Instructions
Step 1
Refer to the instructions on your muffin mix for exact quantities, but we’ve converted them to tablespoon measurements for your convenience. Peel the roasted chestnuts and chop them into small, bite-sized pieces. For best results, ensure your milk and egg are at room temperature before you begin. This helps the ingredients combine more smoothly.
Step 2
To easily melt the butter, place it in a stainless steel bowl and set it over a larger bowl of hot water (double boiler method). In a separate mixing bowl, whisk together the room temperature egg and milk until well combined. Then, add 5 tablespoons of the melted butter and mix gently until incorporated.
Step 3
Add the entire 180g pouch of muffin mix to the wet ingredients. Mix with a spatula or whisk until just combined, being careful not to overmix. A few small lumps are perfectly fine; overmixing can lead to tough muffins.
Step 4
Divide the muffin batter evenly among the 4 disposable muffin cups, filling each about halfway. Filling them too full may cause the batter to overflow during baking.
Step 5
Preheat your air fryer to 180°C (350°F) for about 5 minutes. Once preheated, carefully place the filled muffin cups into the air fryer basket. Arrange the chopped roasted chestnuts attractively on top of the batter in each cup. Letting them peek out a bit makes for a prettier muffin.
Step 6
Gently cover the chestnut pieces with the remaining muffin batter. This helps to keep the chestnuts moist and prevents them from burning during the baking process.
Step 7
Place the muffin cups into the preheated air fryer basket. Set the temperature to 170°C (340°F) and bake for approximately 20 minutes. Keep an eye on them; if they seem to be browning too quickly, you can adjust the cooking time.
Step 8
About halfway through the baking time, around 6-7 minutes in, carefully remove the air fryer basket. Brush the tops of the muffins with the remaining 1 tablespoon of melted butter. This step adds a lovely sheen and a slight crispness to the muffin’s surface. Return the basket to the air fryer and continue baking for the remaining time.
Step 9
Your muffins should now be beautifully golden brown, looking just like they came out of a conventional oven! To check for doneness, insert a skewer or toothpick into the center of a muffin; it should come out clean.
Step 10
Before transferring the muffins to a cooling rack, gently run a finger around the edge of each muffin cup to loosen it. Carefully peel away the disposable muffin liners. This ensures they come out cleanly and easily.
Step 11
And there you have it! Delicious homemade chestnut muffins, perfectly baked in your air fryer. They are wonderful served warm, but also make a fantastic dessert or snack once cooled. Enjoy these delightful treats!
