Skewers Ingredients
- 15 large shrimp, peeled and deveined
- 2-3 stalks of scallions (green parts)

- 1 Tbsp Sriracha sauce
- 2 Tbsp mayonnaise (generous)
- 1/2 Tbsp fresh lemon juice
- 1 Tbsp sugar
- Pinch of dried parsley flakes (optional)
- Pinch of freshly ground black pepper

Cooking Instructions
Step 1
First, prepare the scallions. Slice them into diagonal pieces about 1.5cm to 2cm thick, or into rounds. If they are too thin, they might break apart while cooking, so maintaining a moderate thickness is key. Using a mix of the white and light green parts of the scallions will add a nice color and flavor.
Step 2
Wrap the prepared shrimp around the scallion pieces. Once wrapped, thread a skewer through both the shrimp and the scallion, ensuring they are securely fastened. You can alternate shrimp and scallions on a skewer or use just shrimp. It’s important to secure them firmly so the skewers don’t come apart easily.
Step 3
Heat a pan over medium-high heat and add about 1-2 tablespoons of cooking oil. Place the shrimp and scallion skewers in the hot pan. Using a kitchen torch, sear each side until golden brown, for about 2 minutes. If you don’t have a torch, you can pan-fry them over medium heat, flipping them until nicely browned. Shrimp can become tough if overcooked, so sear them quickly until they turn opaque.
Step 4
Let’s make the delicious Sriracha mayonnaise sauce! In a small bowl, add 2 generous tablespoons of mayonnaise. Stir in 1 tablespoon of Sriracha sauce, 1/2 tablespoon of fresh lemon juice, and 1 tablespoon of sugar.
