- 1 egg
- Pinch of salt
- Pinch of black pepper
- Pinch of parsley (for garnish)
Cooking Instructions
Step 1
Let’s get started on our delicious Pumpkin Egg Casserole! Here are the ingredients you’ll need. This recipe makes one generous serving.
Step 2
First, wash the pumpkin thoroughly under cool water. Preheating the oven to 180°C (350°F) is also a good idea at this stage. Oven preheating typically takes about 10-20 minutes.
Step 3
Place the whole, washed pumpkin in the microwave and heat for about 5 minutes. This step softens the pumpkin, making it much easier to cut and hollow out for our casserole.
Step 4
Carefully remove the hot pumpkin from the microwave. Now, let’s create the ‘lid’ for our casserole. Slice off the top portion of the pumpkin, about one-fifth of the way down. Be gentle while cutting.
Step 5
Using a spoon, scoop out the seeds and stringy insides from the pumpkin cavity. The cleaner you scrape the inside, the smoother the texture of your final dish will be. Make sure to scrape the walls well.
Step 6
See? The inside of the pumpkin is now clean and ready to be filled!
Step 7
Crack one egg directly into the hollowed-out center of the pumpkin. Try not to break the yolk just yet.
Step 8
Now, using a fork, gently pierce and break the egg yolk. It’s important to break the yolk before baking; otherwise, it might burst unpredictably in the oven. Breaking it now ensures it cooks evenly with the other ingredients.
Step 9
Season the egg inside the pumpkin with a small pinch of salt.
Step 10
Add a pinch of freshly ground black pepper for extra flavor.
Step 11
Generously fill the center of the pumpkin with mozzarella cheese. Start with about 140g, or more if you love cheese!
Step 12
Carefully place the cheese-filled pumpkin onto a baking sheet. If the pumpkin is wobbly, you can prop it up slightly with some aluminum foil on the baking sheet for stability.
Step 13
Bake in the preheated 180°C (350°F) oven for approximately 25 minutes. You’re looking for the cheese to be melted and bubbly, and the egg to be cooked through. (Tip: Oven temperatures can vary, so keep an eye on your casserole and adjust baking time as needed.)
Step 14
As the casserole bakes, the cheese might melt down. For an extra cheesy experience, you can open the oven halfway through and add another 140g of mozzarella cheese. Continue baking for another 25 minutes, or until the cheese is golden brown and bubbly. This step ensures a glorious cheese pull! Remove from the oven when the top is nicely browned.
Step 15
Here’s our Pumpkin Egg Casserole, fresh out of the oven! It looks and smells wonderful.
Step 16
For a final touch, sprinkle a pinch of chopped parsley over the melted cheese. The green herbs add a lovely visual contrast.
Step 17
Voilà! Your beautiful Pumpkin Egg Casserole is ready to impress. Isn’t it wonderfully simple to make?
Step 18
The golden-brown cheese atop the sweet, soft pumpkin is a truly inviting sight. The round shape of the pumpkin itself adds a charming touch to this dish.
Step 19
As you cut into the warm, freshly baked casserole, the melted cheese will cascade out like a waterfall – a truly magical moment that makes this dish extra special.
Step 20
Just look at that incredible cheese pull! The abundance of cheese flowing down is a feast for the eyes. It’s truly spectacular!
Step 21
Despite the generous amount of cheese, the natural sweetness of the pumpkin balances it perfectly, making the casserole deliciously satisfying without being heavy. You’ll notice a subtle eggy flavor, too. If you prefer a stronger egg taste, feel free to use two eggs instead of one. Enjoy customizing it to your liking!
