Cheesy Kimchi Fried Rice (Gang Sik Dang Style)
Make Delicious Cheesy Kimchi Fried Rice Just Like on TV!
Hello everyone! As a huge fan of fried rice, I was inspired by the incredibly delicious-looking cheesy kimchi fried rice featured on the TV show ‘Gang Sik Dang’. I’ve recreated it with my own special touch! Get ready to experience the amazing combination of deep flavors and stretchy, melted cheese right in your own kitchen!
Main Ingredients
- 100g Pork (cut into bite-sized pieces)
- Appropriate amount of Green Onion (finely chopped)
- Your desired amount of Aged Kimchi (finely chopped)
- Your desired amount of Mozzarella Cheese (prepare generously)
- 2 Eggs
- Appropriate amount of Seaweed Flakes
- 2 bowls of Rice (warm, cooked rice)
Seasoning & Others
- 4 Tbsp Soy Sauce
- 2 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Sesame Oil
- A little Cooking Oil
- A little Butter

Cooking Instructions
Step 1
First, let’s prepare all the ingredients needed for this delicious cheesy kimchi fried rice. Finely chop the aged kimchi and also chop the green onions.
Step 2
Heat butter or cooking oil in a pan and add the chopped green onions. Stir-fry over low heat until the green onions become fragrant and lightly golden brown. This step infuses the oil with a wonderful aroma, making the fried rice much more flavorful.
Step 3
Once the green onions are nicely browned, add the finely chopped aged kimchi to the pan and stir-fry together. Make sure to keep stirring to prevent the kimchi from sticking to the pan.
Step 4
When the kimchi is cooked to a certain degree, add gochugaru, oligosaccharide, and sesame oil to enhance the flavor. Stir-fry while evaporating the moisture from the kimchi and allowing the seasonings to penetrate evenly, being careful not to burn the mixture. Medium heat is ideal for this stage.
Step 5
Add the pork and soy sauce to the stir-fried kimchi mixture and cook until the pork is fully done. Then, add the warm rice and seaweed flakes. Stir-fry everything together until the rice is fluffy and well combined with the other ingredients.
Step 6
Once the rice is well stir-fried, spread it out slightly in the pan. Generously sprinkle the mozzarella cheese over one half of the rice in a semicircular shape. The more cheese you add, the more delicious it will be!
Step 7
Now for the magical part! Fold the cheeseless side of the rice over the cheesy side, creating a half-moon shape. Gently press down on the folded fried rice to form a round shape again. If you enjoy a slightly crispy, ‘scorched’ rice bottom, you can cook it on low heat for a bit longer. Finally, top it with a sunny-side-up fried egg for a truly appetizing finish! (Look at that beautifully melted cheese!)
