Ingredients for Yellow Cheese Madeleines

  • 2 Eggs
  • 90g Sugar
  • 1 tsp Vanilla Extract
  • 2 slices Processed Cheese
  • 2 tsp Milk
  • 100g Cake Flour
  • 3g Baking Powder
  • 25g Yellow Cheese Powder
  • 100g Melted Unsalted Butter

Cooking Instructions

In a bowl, whisk together the 2 eggs and 90g of sugar until the mixture becomes pale yellow and fluffy. Add 1 tsp of vanilla extract for a touch of aroma. For the cheese, tear or finely chop the 2 slices of processed cheese and place them in a separate small bowl. Add 2 tsp of milk to the cheese. Place this small bowl over a pot of simmering water (double boiler) and stir gently until the cheese is completely melted and smooth. Pour the melted cheese mixture into the egg mixture and whisk until well combined and no lumps remain.

Sift together 100g of cake flour, 3g of baking powder, and 25g of yellow cheese powder into a clean bowl. Gradually add the sifted dry ingredients to the wet batter, mixing until just combined. Be careful not to overmix, as this can result in tough madeleines. Mix only until you no longer see streaks of flour.

Gradually incorporate the 100g of melted unsalted butter into the batter. Add the butter in 2-3 additions, mixing gently after each addition until fully incorporated. This gradual addition helps create a smoother, glossier batter.

Transfer the completed batter into a piping bag. Refrigerate the piped batter for at least 1 hour. This resting period allows the ingredients to meld together, resulting in a more tender and flavorful madeleine.

Generously grease your madeleine molds with melted butter, or line them with parchment paper. This step is crucial to prevent the madeleines from sticking and ensure they release cleanly after baking.
