Lightly grease a non-stick pan heated over low heat. Pour in the separated egg white mixture and spread it thinly by tilting the pan. Starting from one end, carefully roll it up. Push the cooked portion to one side of the pan, add more egg white mixture to the empty space, and continue rolling. Repeat this process to create a long, cylindrical omelet shape using only the egg whites.
