As June begins and the weather heats up, we naturally crave refreshing summer foods like naengmyeon! While cold noodles are delicious on their own, a special recipe can elevate them to a whole new level of deliciousness. Today, I’ve made a Cheesy Bibim Naengmyeon Pancake, and to my surprise, it turned out incredibly tasty, far exceeding my expectations! Let’s introduce the product briefly and get started with the cooking right away!

  • 2 Tbsp cooking oil

Let’s start by gathering all the necessary ingredients to make the Cheesy Bibim Naengmyeon Pancake using Nongshim Dungji Naengmyeon!

This is the Nongshim Dungji Naengmyeon Bibim Naengmyeon, the star of our recipe! Made with dried noodles, it’s a healthier and even more delicious choice for bibim naengmyeon.

This product features a spicy sauce fermented for 7 days with pureed Korean pear and red chili peppers, and noodles that are air-dried immediately after being freshly made, ensuring a wonderfully chewy texture. Plus, its convenient single-serving packaging makes cooking and storage a breeze.

Upon opening the package, you’ll find the noodles shaped like a bird’s nest, along with dried pollock flakes and the fermented spicy sauce.

I especially liked that the bottom of the sauce packet was clearly marked for easy opening. It tears open quite nicely in practice!

Now, let’s begin cooking! First, pour 800ml of water into a pot and turn the heat to high (strong fire).

Bring the water to a rolling boil.

Once the water is boiling vigorously, add the naengmyeon noodles and

the dried pollock flakes. Then, reduce the heat to low (weak fire) and boil for 3 minutes. Make sure not to overcook the noodles.

The noodles are bubbling away nicely in the pot! They’re cooking beautifully.

To ensure the noodles cook evenly and don’t stick together, gently stir them with chopsticks.

After 3 minutes, the noodles are perfectly cooked! Drain them thoroughly in a sieve. ★Important Tip! If you were eating this as regular bibim naengmyeon, you would rinse the noodles under cold water. However, since we’ll be pan-frying them later, do NOT rinse them. Just drain them well. Keeping them warm and slightly wet helps them bind together better when fried.

To make them easier to handle, cut the noodles with scissors about 2-3 times. Overly long noodles can be tricky to manage when pan-frying or eating.

Now it’s time to pan-fry. Turn the heat to medium (medium fire) and once the pan is sufficiently heated, add 2 tablespoons of cooking oil and

spread it evenly across the entire pan. A well-oiled pan prevents sticking and ensures a nice crisp.

Place all the sauced noodles onto the heated pan. Spread them out evenly into a flat, round shape, much like a large pancake.

Next, generously sprinkle 60g of pizza cheese over the noodles. More cheese is always better!

Cover the pan with a lid and let the cheese melt. Once covered, reduce the heat to low (weak fire). Let it cook undisturbed for about 15 to 20 minutes. Cooking on low heat allows the bottom to get crispy without burning.

After the time is up, lift the lid. The pizza cheese should be beautifully melted and golden, and the bottom of the pancake should be perfectly crispy! Now, let’s plate it up.
