You’ll need one packet of Jjajangmyeon instant noodles, 200g of fresh pork (pork belly or shoulder work wonderfully), one medium-sized onion, and one stalk of green onion. If you prefer, you can substitute the pork with beef for an even richer flavor.

Slice the onion into thick strips. Cutting them too thinly might cause them to become mushy when stir-fried, so aim for a substantial thickness. Chop the green onion into small pieces. The white parts will be used to create fragrant scallion oil, while the green parts can be used as a garnish.

Cut the pork into bite-sized pieces. It’s important to slice them to a manageable size so they don’t break apart during cooking. For a more luxurious and deeply flavored Chapaguri, consider using beef with good marbling instead of pork. It will add a wonderful depth of taste.

Now, let’s begin the cooking process. Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the chopped green onions and stir-fry them to create a fragrant scallion oil. Be careful not to burn the onions; cook them slowly over low to medium heat to fully release their aroma.
