In my household, even a family member who isn’t a big fan of carrots absolutely loves this carrot kimbap! I’ll walk you through the step-by-step process of making this delightful carrot kimbap that everyone, young and old, can enjoy.

Prepare one large carrot, weighing about 400g, which will make four rolls of kimbap. First, wash the carrot thoroughly, peel it, and then julienne it into very thin strips. Cutting them thinly ensures they cook evenly and distribute well within the kimbap.

Sautéing carrots in oil enhances the absorption of beta-carotene, making them even healthier. Heat a non-stick pan over medium heat and add 3-4 tablespoons of cooking oil. Once the oil is warm, add 0.5 teaspoon of salt and 1 tablespoon of minced garlic. Stir-fry the julienned carrots until they become tender. If you prefer a slightly crispier texture, you can shorten the cooking time.

Let’s make a rich egg garnish for your kimbap! Crack 5 eggs into a bowl, add 1-2 pinches of salt, and whisk them well until smooth. Lightly grease a non-stick pan with cooking oil over medium heat.
